Lemon Nut Cookies
1/2 cup margarine or butter 1/2 cup brown sugar packed 1/2 cup sugar 1 egg 1 1/2 teaspoons lemon peel grated (optional) 2 teaspoons lemon juice 1 1/2 cups flour 1/2 teaspoon baking powder 1/4 teaspoon salt 1/4 teaspoon ginger ground (optional) About 36 pecan halves (about 3/4 cup)
Preheat oven to 375° F. Cream margarine or butter and sugars. Beat in egg, lemon peel and lemon juice. Stir together flour, baking powder, salt, and ginger, then stir into creamed mixture. Drop by tablespoonfuls 2" apart,onto greased cookie sheets. Press a pecan half onto each cookie. Bake 12 minutes or until lightly browned around edges. Makes about 3 dozen.
