Whole Grain Bread
16 oz. pkg. hot roll mix OR 4 cups Homemade Mix plus 1 pkg. dry yeast
1 cup quick cooking oats
3 Tbsp. wheat germ
2 Tbsp. brown sugar
1-1/4 cups hot water
2 Tbsp. butter, softened
2 eggs
Grease a 2 quart casserole dish. In a large bowl, combine flour mixture from mix with the yeast from foil packet, oats, wheat germ, and brown sugar and mix well to combine. Add hot water, butter and eggs and beat until well mixed. The batter will be sticky. Place in prepared casserole, cover, and let rise in warm place for 30-40 minutes.
Preheat oven to 350 degrees. Bake bread for 30-40 minutes, until bread sounds hollow when lightly tapped with fingers and bottom crust is golden brown. Immediately remove from casserole and let cool on wire rack.
Oatmeal Batter Bread
2 to 2-1/2 cups flour
3/4 cup rolled oats
1 tsp. salt
1 pkg. dry yeast
1 cup water
1/3 cup honey
1/4 cup butter
1 egg
Grease an 8x4" loaf pan. In a large bowl, combine 1 cup flour, oats, salt and yeast and mix well. In a small saucepan, heat water, honey and butter until very warm, about 120 degrees. Add to flour mixture along with egg, and beat for three minutes. Stir in additional 1 to 1-1/2 cups flour to make a stiff batter. Cover batter and let rise until light, about 25-30 minutes.
Stir down batter and place in prepared pan. Cover and let rise until batter reaches top of pan, about 15-20 minutes. Heat oven to 375 degrees. Bake bread for 35-40 minutes until loaf sounds hollow when lightly tapped. Remove from pan immediately and place on wire rack to cool. Makes one loaf
Honey Rolls
3/4 cup milk
1/4 cup orange juice
2 tablespoons oil
5 tablespoons butter
2 tablespoons honey
1 cup whole wheat flour
2-1/4 cups all purpose flour
1 package active dry yeast
1/2 teaspoon salt
1 egg
1 egg yolk
1/3 cup sugar
2 tablespoons butter, softened
2 tablespoons honey
1 egg white
In a large saucepan, combine milk, orange juice, oil, 5 tablespoons butter, and 2 tablespoons honey until butter melts and mixture is warm, about 110 degrees F.
In large bowl, combine 1 cup whole wheat flour, 1/2 cup flour, yeast, salt, egg, and egg yolk along with warm milk mixture. Beat with a mixer for 3 minutes. Then add the remaining 1-3/4 cups flour and beat with dough hook for 2 minutes longer. The dough will be very soft and sticky.
Cover bowl and place in warm place. Let the dough rise until light and doubled in size, about 1 hour.
Grease 2-8" round cake pans with unsalted butter or solid shortening or spray with cooking spray containing flour.
Stir down dough, beating for 1 minute. Then drop the dough by tablespoons into a single layer in each prepared pan, forming 10 rolls per pan.
In a small bowl, combine sugar, 2 tablespoons butter, 2 tablespoons honey, and egg white and mix well. Drizzle half of this mixture over the rolls. Then cover the rolls and let rise again in a warm place until doubled in size, about 25-30 minutes. Drizzle remaining topping over rolls.
Then bake in a preheated 350 degrees F oven for 25-30 minutes or until rolls are golden brown. Immediately remove from pans and cool on wire racks. Makes 20 rolls
Cinnamon Raisin Bread
1/2 cup sugar
2 packages active dry yeast
1-1/2 cups warm milk
2 eggs
1/2 cup butter, melted
4-1/2 cups flour
1 teaspoon salt
1 teaspoon cinnamon
1-1/2 cups raisins
1 cup powdered sugar
2 tablespoons milk
1 teaspoon vanilla
Grease a 13x9" pan and set aside. In large bowl, combine sugar and milk and stir until dissolved. Sprinkle yeast over this mixture and let stand for 5 minutes. Add the eggs and beat well. Stir flour, salt, and cinnamon into the mixture. Mix in raisins and spread batter into prepared pan. Brush top with melted butter. Cover and let rise until double, about 30 minutes.
Preheat oven to 350 degrees F. Bake bread for 30-35 minutes until golden brown. While bread is baking, combine the powdered sugar, 2 tablespoons milk and vanilla and whisk until smooth. When bread comes out of oven, drizzle with the powdered sugar mixture and let cool.
Sally Lunn Bread
4-1/4 cups lal purpose flour
1 package active dry yeast
1/3 cup sugar
1 teaspoon salt
1/2 cup milk
2 tablespoons orange juice
1/4 cup water
2 tablespoons buttermilk
1/2 cup butter, cut into pieces
3 eggs
Combine 2 cups flour, yeast, sugar, and salt in large bowl and stir to blend. In a small saucepan, combine milk, orange juice, water, buttermilk, and butter until warm. Add to flour mixture along with eggs. Combine until blended, then beat for 3 minutes. Stir in enough remaining flour to make a stiff batter that is difficult to stir with a wooden spoon. Cover and let rise until doubled, about 50 minutes.
Grease a 10" tube pan with solid shortening or unsalted butter. Stir down batter and spoon into prepared pan. Cover and let rise until batter almost doubles, about 30 minutes.
Bake in preheated 350 degrees F oven for 40-50 minutes until golden brown. Remove from pan and serve warm. Serves 12
Three Cheese Batter Bread
1/4 cup butter
3/4 cup buttermilk
3/4 cup water
1 package active dry yeast

3-1/2 to 4 cups flour
2 tablespoons sugar
1 teaspoon baking soda
1/2 teaspoon salt
1/4 cup grated Parmesan cheese
1 cup shredded Cheddar cheese
1/2 cup shredded Swiss cheese
Place butter in medium saucepan and melt. Add buttermilk and water and heat until warm to the touch. Pour into a large mixing bowl and sprinkle the yeast on top. Stir and let stand for 5 minutes; then whisk in the eggs.
Stir together flour, sugar, baking soda, and salt and stir into the egg mixture to make a stiff batter; start with smaller amount of flour and add more if necessary. Stir in the Parmesan cheese, Cheddar cheese, and Swiss cheese.
Grease two 8x4" loaf pans and spread batter into pans. Cover and let rise for about 40 minutes; meanwhile, preheat oven to 375 degrees F. Bake loaves for 35-40 minutes or until deep golden brown. Turn breads out onto wire racks and cool.
