Simple Lemon Pie contributed by carla
1 pkg. cook-and-serve vanilla pudding 1 pkg. lemon jello 2-1/3 c. water 1/3 c. lemon juice 1 graham cracker crust 1-1/2 c. Cool Whip or sweetened whipped cream
In a small saucepan, combine pudding mix and gelatin. Add water and lemon juice; stir until smooth. Cook and stir over medium heat until mixture comes to a boil. Cook and stir 1-2 minutes longer or until thickened.
Remove from heat; cool slightly. Pour into crust. Cover and refrigerate for 3 hours or until set. Spread with whipped cream.
