Mock Apple Pie
pastry for 2-crust 9-inch pie 25 RITZ Crackers (or use the generic substitute) 1 1/2 cups sugar 2 tsp. cream of tartar 1 Tbsp. lemon juice 1 Tbsp. butter or margarine 1 tsp. ground cinnamon
PREHEAT oven to 425°F. Roll out half of the pastry and place in 9-inch pie plate.
MIX sugar, cream of tartar, lemon juice, butter, and water in medium saucepan. Bring to boil on high heat. Stir in crackers and cinnamon and continue cooking 2 minutes. Pour into prepared crust.
Roll out remaining pastry; place over pie. Trim; seal and flute edges. Slit top crust to allow steam to escape.
BAKE 25 to 30 minutes or until crust is crisp and golden. Cool.
