I had some leftover biscuits, so I set out to make a bread pudding that all of my kids would like. I did it! They said it tastes like soft chocolate chip cookies.
If you don't have biscuits, you could use bread instead.
First, heat oven to 350 degrees.
Melt half a stick of butter, then use part of it to grease the sides and bottom of a 9" square pan. (I used a brush) Set remaining butter aside.
Break enough biscuits to just cover the bottom of the pan. Sprinkle a handful of chocolate chips and a handful of butterscotch chips over broken biscuits. Break more biscuits over chips, add more chips, then top with more broken biscuits. The pan should be about 3/4 full.
In medium-size bowl, mix 3 or 4 eggs (depending on their size) and about 3 cups of milk. Whisk in a cup of sugar, the reserved melted butter, and a splash of vanilla. Carefully, pour this mixture over biscuits and chips in pan. Sprinkle a couple of handsful of brown sugar over all. This makes a crunchy topping.
Bake for about 45 minutes or until knife inserted in center comes out clean.
Note: I made a pan of this without the chips. The butter in the custard and the brown sugar on top made it so much better! I couldn't believe the difference it made!

That sounds good. You scared me when you started with the biscuits. They use leftover biscuits to make bread pudding at the restaurant where I used to work and it is N-A-S-T-Y! But they mash them up into crumbs, make the milk/egg stuff, then soak the biscuits in it overnight. Then they bake it. It will sit in your stomach like a stinkin' rock.

I just sort of squeezed the biscuits so they weren't in big hunks, but not so much that they were dust. Then I poured on the custard, sprinkled on the brown sugar, and threw it in the oven. It came out kind of firm, yet soft, if that makes sense.
Actually, I had already put the pudding in the oven before I thought of putting brown sugar on it. It was only in there a couple of minutes, so I pulled it out and added it, then put it back in. That was a good move, adding the brown sugar. I think it was the best part.

Thats how I make biscuit pudding but I never thought about putting the brown sugar on it. Sounds yummy. We may have that tomorrow for breakfast. Thats when I like bread pudding best. Then I like it cold.

The kids finished it for breakfast - cold. They were still bragging on it, even the ones who don't normally like it.
The brown sugar didn't stay crunchy, but turned into a light syrup. Still good.

Belinda's friend, who spent the weekend with us, called her last night and said, the next time she spends the night, she wants me to make it again.
