a 2 lb pumpkin Seeded, cubed and baked in a 350 oven until tender While pumpkin is cooking place 3 cups chicken stock 1 large carrot grated 2 tsp onion powder
in soup pot and cook over low until pumpkin is done in oven.
Add pumpkin to stock and blend until smooth. (I use a stick blender)
Add a cup of cream and salt and pepper to taste.

I have been wondering what to do with a little pumpkin someone gave me. I think I'll try this recipe. I have everything for it. I've never had pumpkin soup before.

Christy, I just made this and it's stinkin' good. I added a tiny pinch of curry powder to it and that really made the flavor pop.

Oh have never had pumpkin soup sounds good think i'll make this for christmas
