Banana Pudding Pies
Crust
3 cups finely crushed vanilla wafers (I pulsed them in a food processor)
1/2 cup butter, melted
2 T. sugar
Pudding
1/2 cup cornstarch
1 cup sugar
1/2 t. salt
4 cups milk
4 T. butter
1 T. vanilla extract
Additional Ingredients
4 bananas
Additional vanilla wafers (I used about 1 1/2 bags altogether)
4 cups whipped cream (I used 2 packets of Dream Whip)
Crust
Mix crushed vanilla wafers, melted butter, and sugar thoroughly. Put half of mixture into each of 2 9" pie plates. Press firmly around edges and in bottom, to form a crust. Bake at 350 for 10 minutes or until lightly browned around the edge. Set aside to cool.
Pudding
In large saucepan, mix cornstarch, sugar, and salt. Gradually add milk, stirring to make it smooth. Cook on medium heat until mixture comes to a boil. Boil 1 minute. Add butter and stir until melted. Stir in vanilla. Lay a sheet of waxed paper on the surface of the pudding and set aside to cool.
Assembly
When pudding has cooled, put a thin layer of pudding in the bottom of each crust. Slice one banana in each pie, spacing the slices to cover the layer.
Add another thin layer of pudding to each pie, Top that with a layer of vanilla wafers.
Add another thin layer of pudding and top it with another sliced banana for each pie. Top with remaining pudding and chill pies.
Make whipped cream (real whipped cream, Dream Whip or thawed Cool Whip, whatever you like) Divide between the two pies. Decorate pies with additional vanilla wafers (I stuck one into the whipped cream, on its edge, on each slice of pie, then cut the slices between them) Chill until ready to serve. Store remaining pie, if any, in refrigerator.
