Peach Pie Filling contributed by chilipalmer
5 c. peaches, sliced 1/2 c. flour 1/4 tsp salt 2 tbsp butter 1/2 tsp almond extract 1 tsp vanilla 1/3 c. brown sugar 2/3 c. sugar 1/2 tsp cinnamon 1/4 tsp ginger 1/4 tsp cloves
Mix and pour immediately into unbaked pie shell. Makes enough filling for two generous pies. Do not allow to stand or it will get nasty and soupy and generally unfit for pies.
