Quick Peach Cobbler
1 cup self-rising flour 1 cup milk 1 large can of peaches 1 cup sugar 1 stick butter
Using a deep metal bowl or casserole, mix flour, milk, and sugar. Pour in peaches, juice and all (do not stir), dot with butter. Bake at 350 deg. for 50 minutes.
Serve warm, cold, or at room temperature, with whipped cream, milk, ice cream, or plain.

An entire stick of butter? Could I get away with less, or does it need the moisture? This sounds really good and easy!

I never tried using less. It's a little on the dry side (by dry, I mean not real juicy), so it might need it.

My mom used to make this once a week, but she did it a little differently. She'd put the stick of salted butter in the pan, and put the pan in the oven while it preheated. Then she'd pour the batter over that, and put the peaches on top, then bake.
The melted butter gave both a crispy texture to the top of the crust and added the bit of salt it needed.
I make it (for a treat) with coconut milk. So good. BTW - my mom would make it with any fruit she could get her hands on. They were all winners.

That's how we do it, too, Sandra. This is my favorite cobbler recipe.
It's good to throw a handful of blueberries (frozen is fine) with the peaches, too. It also works with a quart of home canned peaches.

Sandra and Valerie, I'm going to try it your way. I might even make it today. It would go good with what I have planned for supper (ham and mac & cheese)
