If you have a cookie that is too hard or crisp, you can make a simple glaze (powdered sugar, a little vanilla, and hot water or coffee to thin), dip the cookies in it, then set on a rack to dry and harden. The moisture from the glaze will soften the cookies and the hardened glaze will seal the moisture in.
If you want to decorate the cookies further, you can sprinkle with colored sugars or press bits of chocolate, dried fruits or candies into the still-wet glaze or wait until it hardens and decorate with frosting.
If you like, you can add other flavorings or even food color to the glaze.
