I made this for an afternoon snack today (really, I just wanted to try it, but all the kids wanted to try it, too, so it became snack-time) I served it with a lemon syrup (1 cup sugar, 1/2 cup water, boil then stir in a little lemon juice and a little lemon extract). It was pretty tasty and a nice change from standard pancakes.
German-Style Pancake
3 eggs 1 cup milk 1/2 teaspoon salt 1/4 cup sugar 1 teaspoon vanilla extract 1 1/2 cups all-purpose flour 1 tablespoon baking powder 2 tablespoons butter
Preheat oven to 400 degrees F.
Whisk together flour and baking powder until blended. In a separate bowl, whisk together eggs, milk, sugar, salt, and vanilla extract. Dump the dry ingredients into the wet and whisk until batter is smooth. Let stand while heating skillet.
Heat an 8 - 10-inch cast iron skillet in the oven with the butter until butter is lightly browned.
Pour the batter into the hot pan and bake until the pancake is golden brown, puffed up and set in the center, about 15 - 20 minutes.
Cut into wedges and serve hot with fruit and/or syrup.
Serves 6 normal people or 2 teenagers.
