Cheeseburger 'N Fries Soup
3 lbs. ground round 2 large onions, diced 8-9 medium potatoes, peeled and diced or julienned to resemble fries (keep potatoes in a bowl of cold water until ready to add to soup) 1 qt. (4 cups) tomato juice 1 qt. (4 cups) water 2 t. minced garlic 2 T. Worcestershire sauce 1/2 t. celery salt 1 t. beef soup base 2-3 T. prepared mustard 1 level t. instant coffee 1/2 lb (2 cups) shredded sharp Cheddar cheese salt and pepper, to taste crumbled bacon, optional
Brown ground chuck and onions, taking care not to break up the burger too much. Add garlic and cook a minute or two. Add tomato juice, Worcestershire sauce, celery salt, beef soup base, mustard, instant coffee, and potatoes. Bring to a boil, reduce heat, and simmer until potatoes are tender and soup thickens somewhat. Stir in shredded cheese, salt, and pepper.
Top each bowl with crumbled bacon and/or additional shredded cheese, if desired.
