I made this for breakfast today and it was really good and filling. It fed all of us generously with enough left over for Ben's breakfast tomorrow. I used leftover boiled potatoes, instead of starting from raw.
Breakfast Mess aka Breakfast Bowl
6 cups shredded or diced potatoes or 1 pkg. (26 ounces) frozen shredded hash brown potatoes 1/4 cup vegetable oil 1 large green pepper, chopped 1 large onion, chopped 2-3 garlic cloves, minced (or 2 t. minced from a jar) 1 can (12 oz) Spam (or Treet), cubed or 3 cups cubed fully cooked ham 6 eggs, lightly beaten 1/2 teaspoon salt 1/4 teaspoon pepper 1-1/2 cups (6 ounces) shredded Cheddar cheese
In a large skillet, fry potatoes in oil for 10 minutes.
Add green pepper, onion and garlic; continue to cook for 25 minutes or until potatoes are browned and vegetables are tender.
Stir in Spam; heat through.
Cover and remove from the heat.
In another greased skillet, combine eggs, salt and pepper.
Cook and stir gently until eggs are set.
Distribute evenly on top of potato mixture.
Top with cheese; cover for 3-5 minutes or until cheese is melted
To make one serving~
1 medium potato, shredded or diced 2 T. vegetable oil 1 T. diced bell pepper 2 T. diced onion 1/3 t. minced garlic 1 slice (1/6 of a can) Spam or Treet, diced, or 1/2 cup fully cooked ham, diced 1 or 2 eggs, beaten salt and pepper to taste 1/4 c. shredded cheddar cheese
Proceed as above.

This is almost like what I make i put this in heated tortilas and add salsa the only difference have not added meat to it but sounds good.
