We had this for breakfast today. Everyone liked it, even the one who doesn't like cheese. This recipe is a keeper.
Overnight Sausage And Grits 3 cups water 3/4 cup grits 1 pound bulk pork sausage, cooked and crumbled 2 cups shredded cheddar cheese 3 eggs 1-1/2 cups milk 3 tablespoons butter or margarine 1/4 teaspoon garlic powder
In a large saucepan, cook grits in water until thick. Stir in butter or margarine.
Meanwhile, brown sausage in another pan, breaking it up as it cooks. Drain.
Stir sausage, cheese, and garlic powder into hot grits.
Beat the eggs and milk; stir into grits.
Transfer to a greased 13-in. x 9-in.x 2-in. baking dish.
Cover and chill 8 hours or overnight.
Remove from the refrigerator 30 minutes before baking.
Bake, uncovered, at 350° for 1 hour or until a knife inserted near the center comes out clean.
Let stand 5 minutes before cutting.

Note: if you didn't want to let it sit at room temperature for half an hour before baking, but didn't want to risk breaking a glass casserole, you could just start it in a cold oven and cook it a few minutes longer.
