Green Goddess Salad Dressing
3 T. finely chopped parsley 3 T. sliced green onion 2 T. chopped chives or tops of green onions 1 (two-ounce) can anchovy fillets, mashed 1 cup mayonnaise 1 T. tarragon vinegar 2 T. lemon juice 1/4 t. salt dash of pepper
Mix well. Makes two cups dressing.
Note: I used 1 T. dehydrated chives for the fresh chives, 2 T. finely minced regular onion in place of the green onion, 1 T. dried parsley instead of fresh, and white vinegar and 1/4 t. tarragon for the tarragon vinegar. I rehydrated the dried herbs in the vinegar and lemon juice before adding them to the dressing. I also added 2 drops of green food color, since the dried herbs don't give it its classic color.

You mentioned that you have trouble finding anchovies. Let me know if you ever want me to pick some up for you and send them

That's how it was in Michigan, but, apparently, nobody uses them around here. I might be able to get them in the city. I'll look the next time I go. If they have them, I'll stock up.

I tried some of this dressing on a turkey sandwich today. Outstanding!
