Eggs and toast all in one dish. What could be easier?
Amish Eggs
This is for one serving. Multiply by as many people as you're feeding.
1T. butter 2 slices of bread, broken into bite-size chunks 1 or 2 eggs, beaten with a little milk salt and pepper, to taste (optional)
Melt butter in skillet. Add bread chunks and cook, stirring occasionally, until bread is browned. Stir in egg and milk mixture and continue cooking, stirring occasionally, until eggs are set. Season to taste. Serve hot.

Kind of like savory bread pudding. We'll try it in the morning too. I have a bunch of eggs to use up. Good idea

BigM, you're referring to 'egg in a frame', aren't you? It took me a while to figure it out because we call that 'toad in a hole'. I'd have to call this 'slaughtered toad in an exploded hole' Yikes!
