Crackered Eggs
2 eggs 1 cup milk 20 saltines pepper, to taste (leave it out if you don't like it) butter for frying
Beat eggs in medium bowl. Beat in milk. Crumble crackers into mixture and add pepper, if using. Let mixture sit for 10 minutes.
Melt butter in skillet. Pour 2 T. of mixture into pan and cook until brown on bottom. Turn and brown other side. Continue making these cakes until you use all of the mixture. Serve hot.
Alternately, you can pour the entire mixture into the pan, brown on bottom, turn and brown other side, and cut into pieces to serve or you can pour the entire mixture into the pan and cook, stirring occasionally, until it begins to brown. (I do it in individual 'pancakes')
This can be served with syrup, if you prefer (I serve it plain)

We ate crackers and eggs .Soft boiled eggs ,crack them into a bowl then add butter,pepper and crackers. Always had them on Easter Sunday.

We used to eat soft-boiled eggs mashed with butter and salt, but I never had them with crackers. I think it would be good. After all, what's not to like? If these chickens ever keep up with the demand for eggs here, I want to try that.

love soft boiled eggs with butter and Salt & pepper .. we are going to try thiis sounds like a good old dish.
