Not being one to jump out of bed and start fixing a big breakfast, this is a good recipe for me. All you have to do in the morning is beat in 2 ingredients and they're ready to cook.
Overnight Yeast Waffles
1 package dry yeast (or 2 1/2 t. bulk yeast) 1/2 cup warm water (about 100 degrees) 2 cups milk 1/3 cup butter 1 teaspoon salt 1 teaspoon sugar 3 cups sifted flour 2 eggs 1/2 t. baking soda
Measure milk into small saucepan, add butter, and heat until butter is melted (you can do this in the microwave, if you prefer). Set aside to cool to about 100 degrees.
Once milk/butter has cooled, dissolve yeast and sugar in warm water in a large mixing bowl. Add milk/butter mixture, salt, and flour; beat well with mixer. Cover and let set at room temperature overnight.
In the morning beat in eggs and baking soda. Bake in waffle iron until waffle stops steaming.
Makes about 20-22 waffles, more or less, depending on the size of waffles your waffle iron makes.

Sounds good,just add some finely chopped walnuts yum or some blueberries.Wonder if I could use half wheat and half white flour.

I don't see why not. I was thinking about trying it with 1/2 cup of spelt in place of 1/2 cup of all-purpose flour.
I'd stir the fruit and nuts into the batter after beating in the eggs and baking soda so they don't get too mashed.

Do y'all think it would be possible to make pancakes out of waffle batter? I don't have a waffle iron and am way too cheap to go out and buy one.

I know you can't make waffles out of pancake batter, but I never tried to make pancakes out of waffle batter. They're the same consistency, so it might work.

I sure do love the taste of a good waffle. I probably ought to have my brother's girlfriend keep an eye out for a waffle iron for me. She makes weekly rounds of thrift stores and yard sales, and if she knows someone is looking for something, she'll snatch it up for them if she sees it.
We used to live in this OLD house in Central Florida, and when we were painting it, Daddy got the attic open (the door was a window that opened onto part of the roof). There was an old cast iron waffle iron in there that sat on top of the stove. I would give my eye teeth to have that now! But I was only 11 at the time so I didn't keep it.

2 1/4 cups all-purpose flour 3 tablespoons white sugar 1 teaspoon salt 1 teaspoon ground cinnamon 2 1/4 teaspoons rapid rise yeast 1 teaspoon vanilla extract 1 1/2 cups warm milk 1/4 cup butter, melted 1 egg DIRECTIONS
In a large bowl combine flour, white sugar, salt, cinnamon and yeast; mix well. Add vanilla, milk, butter, and egg until well blended. Cover and place in refrigerator overnight. Heat a lightly oiled griddle or frying pan over medium high heat. Stir the batter with a whisk. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.

Hey, thanks for bringing this back up. I planned to try the waffles. Now I can try both. Val you can still buy an iron waffle maker from the Lodge people. I think that Lehmans sells them too. I've got one on my wish list for when my ship comes in again
