Bacon Cheddar Deviled Eggs
12 hardboiled eggs 4 slices bacon, cooked and chopped 1/2 c mayo 1 tbsp mustard 1 tsp bacon grease (cool to touch) 3 tbsp sharp cheddar 1 tbsp finely diced green onion hot sauce to taste chili powder or paprika
Slice cooked eggs in half, place whites on a platter and yolks in a bowl. Add everything (except the chili/paprika) to the bowl and mash well. Use a whisk next to beat the mixture for maximum creaminess in your filling, if you like it chunky then skip this part. Put the filling into a parchment or sandwich bag and cut off the tip to make a piping bag. Pipe egg whites full. Dust lightly with chili powder or paprika and chill until ready to serve.
Takes about half an hour if you're counting cooking the eggs and bacon. Any extra filling is fantastic spread thin on crackers. I've got too many hardboiled eggs still hanging around the house, so I'm going to try it as a sandwich filling.

My uncles always puts bacon in his devilled eggs and they are awesome. Sometimes he will also take a tomato and get all the seeds out, then scrape the pulp off the skin and add that. I guess you could just peel the tomato first, get the seeds out, and chop up what's left.

Awww! I was just looking up this recipe to make these for supper! That comment I made two years ago was about my uncle who just passed away last month. He will be famous for his deviled eggs! ;D
