Lemonade Gelatin
1/4 cup lemon juice (fresh or bottled) 1 packet Knox gelatin 1 1/2 cups boiling water 1/4 t. pure lemon extract 1 1/4 cups sugar (you could adjust that amount to suit your taste)
Sprinkle gelatin over lemon juice. Let set 5 minutes to allow gelatin to soften. Add boiling water and lemon extract. Stir well. Stir in sugar until dissolved. Refrigerate until firm.
