Chocolate Fudge Pudding
2/3 cup sugar 1/4 cup cornstarch 1/8 t. salt 2 3/4 cup milk 2 oz. unsweetened baking chocolate 2 T. butter 1 t. vanilla
In large saucepan, mix sugar, cornstarch, and salt. Gradually stir in milk. Drop in chocolate. Bring to a boil over medium high heat, stirring constantly. At this point, the chocolate will not be completely incorporated - OK. Continue boiling and stirring 1 minute. Remove from heat and stir in butter and vanilla. Pour into serving dish and chill.
Makes about 3 cups.
