Honey Nut Cake
3/4 cup honey 1/4 cup melted butter 1 egg 1/2 cup buttermilk or sour milk 1 teaspoon vanilla 1/4 teaspoon salt 1 cup whole wheat flour 1/2 teaspoon baking soda 1/2 cup chopped nuts (whatever kind you like) Honey Glaze (optional)
In a large bowl beat together the honey, butter, egg, buttermilk (or sour milk) and vanilla. Mix until smooth. Add the salt, flour and baking soda. Beat well. Stir in nuts.
Turn the batter into a greased 9-inch square or round pan. Bake at 350° for 25 minutes.
Remove from oven and cool. Drizzle with honey glaze, if desired.
Makes 12 servings.
Honey Glaze
1 T. melted butter 1 T. honey 1 T. hot water 1/2 c. powdered sugar pinch of salt
Mix together and add a tiny bit more hot water, if mixture is too thick. Drizzle over top of cake.
