Cream De Menthe Cheesecake contributed by carla
2 (8 oz.) pkgs. cream cheese, softened 1/2 c. sugar 1/2 t. vanilla 2 eggs 4 t. green creme de menthe 1 chocolate pie crust
Mix cream cheese, sugar and vanilla at medium speed with electric mixer until well blended. Add eggs; mix until blended. Blend in creme de menthe. Pour into crust.
Bake at 350F for 40 minutes or until center is almost set. Cool. Refrigerate 3 hours or overnight.
