This is currently my favorite breakfast. This makes one serving, but you can double, triple, whatever.
3/4 Cup water pinch of salt 1/4 Cup steel cut oats (Bob's Red Mill are good) 2 Tbsp chopped walnuts 2 Tbsp apple butter cinnamon
Bring water and salt to a boil. Add oats and stir. Turn heat down to a slow simmer. Cooking 18 minutes, stirring occasionally. When done, put in a bowl, add a shake or two cinnamon, apple butter, and nuts. Stir and enjoy.

I've been making almost the same thing, except I use brown sugar instead of apple butter. I have half a jar of apple butter in the refrigerator. I think I'll try it.
I don't know why, but I feel a whole lot better all day if I eat oatmeal for breakfast instead of eggs or pancakes.

Me too. Especially if those eggs are accompanied by bread, mayo and cheese! Pancakes do me like donuts: sugar high followed by a crash. But they're just not good without sweet stuff on them.

Michelle, I usually do better with protein, too, so your post made me go check the oat can. 1/4 cup has 5 g and a large egg has 6 g. Plus there's protein in the walnuts, too (but I don't know how much). So I guess that's why this kind of oatmeal works for me.

Personally I like oats too. just plain oats You don't put sugar on them? I usually put about as much brown sugar as I have oatmeal. Even though I eat it, I'm not wild about oatmeal (don't know if it's the flavor or texture), but it just doesn't seem right to eat a bowl of brown sugar and milk.

A cup is 117 grams (not of protein, but weight). Maybe you can figure it out from that. It's 3 am. I can't think straight to do the math. Time for bed (past time, actually) I hope this makes sense in the morning.

Thanks, Gayle. Actually, the 2 T of walnuts is about an oz! So that would mean my bowl of oatmeal has 9 g of protein. Not bad!
I hate oatmeal unless it's the steel cut kind. The rolled oats, even the Old Fashioned, are just way too pasty for me. I'd rather not eat than eat those.
