Corn Muffin Mix Like Jiffy
2/3 cup all-purpose flour 1/2 cup yellow cornmeal 3 tablespoons granulated sugar 1 tablespoon baking powder 1/4 teaspoon salt 2 tablespoons vegetable oil
To make muffins add:
1 egg 1/3 cup milk
Optional Ingredients
1/2 cup grated cheddar cheese (optional) 2 ounces canned chilies (optional) 1/4 cup drained chopped pimiento (optional) 1/2 cup chopped onion (optional)
Directions:
Combine first 5 ingredients in a bowl, mix well.
Whisk in vegetable oil and mix until dry mixture is smooth and lumps are gone.
To make Corn Muffins, preheat oven to 400F, spray muffin pan with non-stick cooking spray.
Combine above mix with egg and milk and mix until dry ingredients are moistened. Batter will be slightly lumpy. Stir in optional ingredients if you're using any. For best rise, let batter rest for 3 or 4 minutes. Stir once or twice after rest.
Fill muffin tins 1/2 full. Bake 15-20 minutes. Makes 6 muffins. (I think it would make 8-10 regular size muffins. I put it in 6 muffin tins and they spread past the edge when they were baked)
Big Batch equal to 6 Jiffy Mixes
4 cups flour 3 cups yellow cornmeal 1 cup plus 2 T. sugar 1/3 cup baking powder 1 1/2 t. salt 3/4 cup vegetable oil
Mix ingredients as above. To make one recipe, use 1 3/4 cup of mix and continue as directed in recipe.

I was just wondering the other day if I could come up with something similar to Jiffy mix. I only use it for Miss Paula's corn casserole but we love it and I dont always have the muffin mix that makes it. Goin to be trying this soon.

I wanted it to make corndog muffins, but didn't have any Jiffy mix and didn't think they'd taste right with my regular cornbread, so I started playing with some online recipes. Jake, Tim, and I ate one batch of muffins between lunch and supper, then I made the corndog muffins for supper. They were good, but I don't think I want anymore muffins for a while. Somebody else can eat the leftovers.
