Corndog Muffins1 package of Jiffy corn muffin mix ( or equivalent) 1 package of hot dogs, sliced 1/2 cup shredded Cheddar cheese Heat oven to 400 degrees. Grease or spray 12 muffin tins. Make muffin mix according to instructions on package. Stir in shredded cheese, if using. Allow to sit for a few minutes. Place sliced hot dogs in muffin cups. Divide muffin batter evenly between muffin cups. (if you prefer, you can layer the hot dogs and muffin batter so the hot dogs will be more evenly distributed in finished muffins) Bake 15-20 minutes or until lightly browned. Serve hot with condiments, if desired (mustard would be good)

I think I made these a couple times when the kids were young. We liked them, too.

I've made these before, maybe 5 years ago. I remember they were ok, but the ones I made last week were really good. I think it was the homemade Jiffy mix that made the difference. I also made some plain corn muffins from it and those were way better than Jiffy. I'm glad I made a big batch and stashed it in the fridge. I might whip up a batch to have with soup for lunch tomorrow.
