CHOCOLATE ZUCCHINI CAKE 1 pkg. Duncan Hines Deluxe Deep Chocolate cake mix 1 tsp. ground cinnamon 1 T instant coffee (opt) 3 eggs 1 1/4 c. water 1/2 c. oil 1 c. shredded unpeeled zucchini drained of all moisture. 1/4 c. chopped nuts Preheat oven to 350 degrees. Grease and flour 10 inch tube pan. Combine dry cake mix and cinnamon in large mixer bowl. Add eggs, water and oil; blend, then beat for 2 minutes at medium speed; fold in zucchini. Turn batter into pan and spread evenly. Bake at 350 degrees for 50-60 minutes. Frost when fully cool with vanilla frosting.
this was so good and moist i didn't frost mine just dusted with powered sugar that I added 1/4 tsp of cinnamon to.
