Why don't you want to use shortening?

I try to never use shortening, either. I think it's about the worst type of thing to put into your system...that's not science speaking, that's EOTS' personal food hangup.
Lard is wonderful, butter is AWESOME, I use a cream cheese/butter combination for guests, lard crusts for us.

Organic, pasture raised pig fat is the best and is equivalent to olive oil. Tastes better though. Coconut oil is good and makes good pie crust.

Would it work to just use butter? Or canola oil instead of coconut(yuck)?

Butter makes good crusts. You couldn't pay me to eat canola in anything. Coconut oil is nice.

Well, to each his own. I just needed to know if it would work. I've always hated coconut, and even the oil has that "taste."
