5 Minute Bread Pudding
Put a slice of bread in the toaster and, when it pops up, butter it and cut into 16 cubes.
Meanwhile, spray a one cup measuring cup with pan spray. Measure in:
1/3 cup milk 1 egg 2 T. sugar (white or brown, your choice) 1/2 t. vanilla extract
Beat well with a fork. Stir in toast cubes and wait a minute or two for the toast to absorb some of the milk mixture. Microwave for 2 minutes. Sprinkle top with cinnamon sugar, if desired.

Sheila, be sure to let it cool a while before you give it to her. It's blazing hot when it comes out of the microwave (says she with a burnt mouth)
