3 cups cooked beans Diced ham - country is best (or you could use a ham bone which is what I did) 1 bunch collards or other greens 1 medium to large onion diced 2 cloves garlic diced Bit of oil 6 cups chicken stock Dried thyme and pepper to taste
In a large pot heat the oil and saute the onions. When the onions are softened add the garlic and stir. Add the rest of the ingredients. Bring to a boil. Reduce heat and simmer, covered, for 20 - 30 minutes.
