No, this is not from either of our grandma's. This came from justapinch.com. I made one of these last night and it was absolutely wonderful, so I wanted to share with y'all.
1 1/2 Cups Quick Cooking Oats 2 1/4 Cups boiling water 1 1/2 Sticks (not cups) butter, softened 1 1/2 Cups white sugar 1 1/2 Cups brown sugar 3 eggs, beaten 2 Cups flour 1 1/2 teaspoons baking soda 1 1/2 teaspoons cinnamon 1/2 teaspoon salt 1 1/2 teaspoon vanilla
Preheat oven to 350° and grease a 9 x 13 pan.
Add boiling water to oatmeal and let stand 20 minutes.
Cream together white sugar and butter. Add brown sugar and eggs. Sift together flour, baking soda, cinnamon, and salt. Add to butter/sugar, along with oatmeal. Mix well. Add vanilla, and mix again.
Pour into prepared pan and bake 50 minutes.
Cool, then make icing.
Icing
1 1/2 Cups brown sugar 1 1/2 Cups flaked coconut 1/2 Cup heavy cream (I used evaporated milk) 6 Tablespoons melted butter
Mix well, spread over cooled cake, then broil for a few minutes until brown and bubbly.
Enjoy!

Sounds yummy Iv'e made oatmeal cake but with cream cheese icing this sounds good Thomas loves any thing with coconut,will need to make this.

Sandra, I think it is similar to the German chocolate cake icing (but I've only had that out of a can). Going under the broiler gives the coconut a bit of a toast, and the brown sugar carmelizes just a little bit and gets a tiny bit crunchy. I don't know if that is how real German chocolate icing is.

Me, either, Valerie, but I have an order for a GF German Chocolate cake (nice to have a cake order!). It sounds so much like all the GC icing recipes I've seen. I expect to make my "test" cake Wed....I'll let you know how it comes out.
