Todd bought me a meat smoker for Christmas and I really love it, but don't love the flavor of charcoal. Can I just use firewood in it? If so, how would I go about doing so?

using wood is much more satisfying than other things - like tire tread or salvaged milk jugs -
the problem with "firewood" is that you won't really have any idea of what the end taste will be - hickory is ok but i wouldn't know how to pick out hickory firewood from any other -
for smoking i use wood cut from an old dead apple tree - it tastes great - i'd imagine any old dried wood from a fruit tree would also be ok - just remember that smoking is not cooking and you don't need huge volumes of smoke - just constant smoke - determining what wood you end up preferring is a big part of the fun - you might decide you like one type for poultry and another for beef and a third for fish - enjoy -

Thanks Joan. The wood we have here is either from our carob tree or our pepper tree. I've never used them for smoking anything (obviously) so I don't really know the end taste. If I wanted to try it, would there be anything that I need to be concerned about, do you think?
Oh--the other wood we might use would be from our plum tree. Given those choices, which might you try?

excellent when used alone for grilling - for smoking a little charcoal is good for keeping the main load of wet wood smoking -

I'd suggest the plum wood to start, or have CrossCreek mail you some mesquite!! BigM

I smoke with green (undried) hickory and finish with green (undried) apple or peach, adding the fruit wood for the last hour. I get it started with any dry wood and don't add the green wood until the original wood has burned down. Needless to say, since I use green wood (because it smokes more) I can only smoke meat when the trees have leaves. That's ok because that's the only time I can identify them anyway.

Ok, so it's a hot smoker. I used to have one like that. It makes very nice, moist meat. Turkeys are fantastic cooked in them.

Oh smoked turkey is yummy,hubby smokes salmon and brisket all the time.He uses almond,apple,allot.

.my son just brought me a huge new smoker todayt. and every thing that goes with it. NOW I am set. got me a fire going in it too. yes i have. look out, mama is going to go wild on that baby today.....
