Technically, this isn't a true simple syrup. You make that with equal parts sugar and water and boil it a few minutes to dissolve the sugar. This is a homemade substitute for corn syrup (aka Karo syrup)
Simple Syrup
2 cups sugar 1 cup water 1/4 t. cream of tartar (or 1/2 t. white vinegar)*
Combine all ingredients in a medium saucepan and bring to a boil. Boil a minute or two and allow to cool.
I store this in a jar in the refrigerator, but I don't know if it would really have to be refrigerated. (probably not)
*The acid keeps this from crystallizing.
If you want this to taste exactly like Karo syrup, add a few drops of vanilla extract. I don't normally fool with it.
