Homemade ginger ale syrup 1 cup thinly sliced fresh ginger 2 cups water 2 cups sugar limes (optional)
Bring the sugar and water to a boil and let simmer until the sugar dissolves. Stir occasionally. Add the cut ginger and let simmer for about 15 minutes. Let cool slightly before straining the syrup into a bottle or jar with a lid. Add the syrup to a glass of club soda, squeeze in a lime wedge and voilĂ - yummy ginger ale!

If you shred the ginger, instead of slicing it, you can dehydrate the ginger to use in recipes. That's what I do. The ginger syrup was actually the secondary product for me, since I was trying to crystallize the ginger.
A slug of the syrup is really good in a vanilla milkshake.
