I'm wanting to find a good cream of potato soup that I can make once per week for Abi to eat all week long. Any ideas? Anyone got a TNT one to share?

I make my cream of potato soup similar to Gayle's, but I puree the potatoes in a blender. Here's what I do: I put several good sized potatoes, peeled and diced, into a large pot along with a stick or two of celery, and some onion and a chicken bouillon cube and salt and pepper. I let this boil until the potatoes are very tender, then cool it a little and puree the whole thing in a blender. I put this back into the pot and add some more diced potatoes, maybe some diced carrots or broccoli (or sometimes corn) and let this simmer until the newly added potatoes are tender. Sometimes you have to add a little more water, not much. Then I add a can of evaporated milk, or a pint of half and half, or just milk if that's all I have. If it isn't quite thick enough to my liking I add some instant potato flakes. Like Gayle says, you can add some shredded cheese, too.
This puree technique also works well to make "cream of broccoli soup" or "cream of asparagus soup" or "cream of cauliflower soup".

Thank you so much for sharing as well upnorthlady---very helpful seeing everyone's variations. I'm sure my own recipe will be somewhere between yours and Gayle's depending on what Abi likes.

I start with the cream of fresh veg. soup recipe in the BH&G cookbook, but I make all sorts of changes depending on mood, availability, needing to use stuff up, etc. The women in my family are not able to follow a recipe exactly (though I do if I am canning it).
