Potato Soup
Peel and dice as many potatoes as you want for your family. I usually do about 8 cups. Put diced potatoes in a large pan and barely cover with water. Add salt (I use about a tablespoon for that amount of potatoes) and bring to a boil. Cook until potatoes are tender.
Meanwhile, in a large saucepan, melt a stick of butter. Add one large onion that has been diced, and cook on low until onion is tender, about half an hour. Stir in 3 T. of all-purpose flour and cook for a minute or two to get the raw flour taste cooked out.
Add 1 can of evaporated milk to the flour mixture, then stir that mixture into the potatoes (don't drain the potatoes first). Season with salt and pepper to taste.
Note: If you like, you can add bits of ham to this. Some shredded cheese, stirred in at the end, will make it potato cheese soup. You can also add vegetables (broccoli and/or carrots are good) or any combination of the above.
A couple of cans of clams will turn it into clam chowder.

This sounds a lot like what I do. I toss in other vegetables for variety, depending on what I have as well.
