Howdy All I'm in need of a bread recipe,my right arm is getting worse it makes it hard for me to knead bread properly and would like a easy recipe for no-knead bread,right now I can't get a mixer with a dough hook.And we do not like store bought bread or rolls. Thanks a bunch

I'll look up my recipe for Sally Lunn. You make it in a tube pan and its just wonderful. Tastes good like bread and slices nice. Not really good for sandwiches unless you toast it. I'll get back later. Ok. Here goes. This was a popular tea bread in colonial times. Sally Lunn 2 pkgs dry yeast 1/2 c. warm water 2 Tablespoons sugar 1 1/2 tsp. salt 2 eggs 1/4 c. shortning 5 1/2 cups all purpose flour Dissolve yeast in warm water in large mixing bowl. Stir in remaining ingredients. Beat until smooth. Cover and let rise in warm place until double, about 1 hour. Stir down batter by beating about 25 strokes. Spread in greased tube pan, 10x4 inches. Let rise to within 1 inch of top of pan, about 45 minutes. Heat oven to 350 degrees. Bake until loaf is golden brown and crusty, 45 to 50 minutes. Remove from pan; serve warm. After it cools its really good toasted.

Sheila, have you looked at thrift stores for bread machines? I've picked some up for $5 or less. You can set it for "dough" and then bake the bread in the oven, make rolls or whatever. It does a good job of kneading and mixing, but not so lovely at baking, IMHO.

Sheila - Here's a recipe I like to use sometimes when I don't feel like kneading anything. It makes a rustic bread that is very good. Makes 1 loaf.
Country Oatmeal Bread
3/4 c. boiling water 1/2 regular oats (NOT the quick type) 3 T. butter or margarine 1/4 c. molasses 1 tsp. salt 1 pkg yeast (about 1 1/2 T.) 1/4 c. warm water 1 egg 2 3/4 c. flour
Grease a 9 x 5 loaf pan. Combine the boiling water, oats, butter, molasses and salt in a large bowl. Cool to lukewarm. Proof the yeast in the warm water. Add the yeast, egg, and 1 1/2 c. flour to the oats mixture. Beat on medium speed with just a regular mixer for 2 min. Then stir in the remaining flour by hand until smooth.
Smooth and pat the batter in the pan with lightly floured hands. If you want, brush the bread with some egg white and sprinkle with 1/4 c. oats, although I usually don't do this. Sometimes I just brush the loaf with water and press in a little bit of oats. Let the loaf rise until double. Bake in a 375 oven for about 50 min.
