hubby just called and said he is bringing home a lug of cucumbers,ok besides eating them raw and making relish what else can be done with them? any ideas.

Pickles is all I can think of, unless some of them are those huge yellow ones that got too big on the vine. I have a recipe for making those into mock spiced apples.

no there just reg cucumbers hubby says about 7 inches long a little bigger then the ones i used for pickles before.

Cukes are one of those things that are seemingly always cheap but I can never figure out what to do with them. Good luck with that, Sheila!

Cuke sandwiches. Spread the bread with a cream cheese spread. Soften the cheese and add enough ranch dressing to make it spreadable. Slice the cukes real thin and make a sandwich. Best on white bread. Dice them up in potato salad Dip them in a tempura batter and deep fry. Make my mama's sunday salad. Chop onion,cukes and seeded tomatoes. Dress with Italian dressing. Sometimes she added drained and rinsed kidney beans.

Cornbread salad is good, too - crumbled cornbread, rinsed and drained kidney beans (or whatever kind of beans you like), onions, cukes, tomatoes, and whatever else you have, all diced - heavy on the cukes and tomatoes. Moisten with mayonnaise and season with salt and pepper. I like to add some diced sweet pickles and a little of the brine, too.
