Country Fair Herb Hearth Bread contributed by gayla
Makes 2 loaves
4 to 4 1/2 cups whole wheat flour 1/2 cup grated Parmesan cheese 1/2 cup finely chopped fresh parsley 2 envelopes yeast 1 tsp salt 1 tsp sugar 1/2 tsp ground sage 1/2 tsp dried rosemary 1/2 tsp dried thyme 2 cups very warm water 2 T olive oil 1 egg white, beaten Sesame seeds (optional)
In a large bowl, combine 1 cup flour, cheese, parsley, undissolved yeast, salt, sugar and herbs. Gradually add water and olive oil. Beat 2 minutes at medium speed of electric mixer, scraping bowl occasionally. Stir in enough remaining flour to make a soft dough.
Knead on lightly floured surface until smooth and elastic, about 8 to 10 minutes. Cover; let rest 10 minutes.
Divide dough in half; shape each into 5-inch smooth ball. Place on 2 greased baking sheets. Cover; let rise in warm, draft-free place until doubled in size, about 30 to 45 minutes.
Brush with egg white; sprinkle with sesame seed. Bake at 375oF for 25 to 30 minutes or until done. Remove from sheets; cool on wire
