Why would you want to substitute coconut? I love coconut, the sub, would probably depend on what you were making. I mean if you are making something sweet you don't want to sub, coconut with lets say Brocolli. YUCK

I've used oatmeal in place of coconut, but it really does depend on what you're making.

ok I have an old recipe for candy Easter eggs my friend who wants to use this children hate coconut. one actually cant have coconuts so I need help ..
this is an old recipe
1/2 tsp vanilla 1/4 lb butter 1 egg white beaten still 1/2 can cocount 1 box 10x sugar
beat the egg until stiff . Keep adding if dry . Form into eggs. let set about 3 hours . Melt 3 squares chocolate and 2 tablespoons paraffin was. Dip each egg into chocolate with a fork. Decorate .

How about rice crispies or some other cereal? Chopped nuts? Crushed cookies? Chopped, dried fruit?

Hi gayla….how about drained, rinsed, crushed or grated shredded canned pineapple or maybe even fresh grated pineapple …it has the same texture as coconut…
As I was writing this I remembered my recipe for fake pineapple jam using Zucchini ,,,I wonder if zucchini would work…
