I've got somewhere between half a cup and a cup of ham drippings. Can't decide whether to keep 'em or dump 'em. Is there any use for them?

There's got to be something you can do. Maybe make gravy to go over biscuits, if it's not too salty?

I fry green beans in it. Canned green beans drained and sauted for a few minutes with some chopped onion.

Hey, how would it be to fry corn in them?

Green beans fried in ham dripping or bacon dripping is to die for!
You can make red eye gravy with ham dripping too. Don't EVER throw out ham dripping!
Use it to season a chicken casserole. Melt some mozzarella cheese on top.
