I like the flavor of coconut, but not the pieces, so I made up this recipe (I couldn't find a plain coconut jelly recipe online). So far, everyone that has tried it has liked it.
Coconut Jelly
1 can cream of coconut water 1 T. lemon or lime juice 1 pack Sure-Jel (or 1/3 cup Dutch Jell) 4 cups sugar
Measure sugar and set aside. Empty can of cream of coconut into a quart-size mixing cup. Add enough water to make 4 cups; stir well. Pour cream of coconut mixture into large pan and add lemon or lime juice and Sure-Jel (or Dutch Jell). Bring to a boil over high heat and boil one minute. Add sugar all at once and bring back to a boil. Boil one minute.
Ladle jelly into sterilized jars, adjust lids, and hot water bath for 10 minutes.
Makes 6-7 cups.

my SIL is going to freak she is a big coconut nut .. she even has coconut body wash she will love this .

You're welcome, Gayla. If the jelly separates into layers, don't worry about it, it's normal. You can either stir it back together when you open it or enjoy the slightly different textures. (I don't stir mine. I like getting two for the price of one)

Darn. Maybe I'll put it in my smoothies for a couple of mornings.
See, our Walmart doesn't have a fabric department, but they have their own liquor store. All the drink mix stuff is in there and they don't have any beer, wine, etc, in the main store. And I don't want to go in there. Next time I'm at Winn Dixie I'll see about getting some cream of coconut there.

I don't know if it's true of all coconut milk, but the one I bought didn't taste or smell very much like coconut. It was just kind of watery and bland. Have you opened yours yet?
Even stores that don't sell alcohol around here have cream of coconut because people use it for making other things besides drinks. It's near the pop. When I said 'mixers', I meant things like club soda, lesser-known pops (Canada Dry comes to mind), and certain juices (fruit nectars, lime juice, and so on) - things that you don't usually use alone, but mix with other things.
That said, they still might not have it. IGA doesn't. That's why I have to get it at Walmart.
I understand you not wanting to go in the liquor store. That's how Kroger is set up here, the liquor is sold in a separate store, although it's attached to the main store. I've never been in there. Luckily, Kroger has cream of coconut near the pop, but every store does it differently.

Winn Dixie sometimes has it on their ethnic food aisle. I'll get some when I'm in town. Now I have to get a bunch since there's so much I want to make out of it!

Tim went to Walmart right after I posted this morning, so I had him get me cream of coconut. They only had 2 cans that weren't lowfat. He got both of them.

I was looking at this can of stuff I got. It says coconut milk, but it sounds thicker than the watery stuff. Also, on the back it says it is the cream of the coconut milk. But you know how that Coco Lopez stuff almost sounds thick like condensed milk? It's not that thick. I think it's like if you make coconut milk, but not the coconut water. I think I'll just use it in the smoothies and get the other stuff when I can. I need some of that sorbet!!!

Coco Lopez is actually thicker than sweetened condensed milk, except for a little more liquidy stuff in the bottom of the can. The more liquidy stuff is about the thickness of homemade sweetened condensed milk. The thicker stuff will hold its shape when you spoon it out of the can.
Coconut milk will have some of the coconut oil that has risen to the top like cream will rise on milk, but the 'milk' underneath will be pourable. It would be good for smoothies.
