I made these for breakfast today. I didn't make the cinnamon sugar especially for them because I already had a jar in the cupboard. While I was making the first 2 pans I saw the bananas and decided to try adding those. It was delicious, maybe even better than plain.
Pumpkin Fritters
1 (15 oz) can pumpkin 1 egg, beaten 1 T. sugar 1/2 cup self-rising flour* 1/2 t. vanilla extract, optional
Mix all ingredients to make a very thick batter (rather like a soft dough). Heat 1 T. butter and 1 T. oil in skillet till bubbly. Drop tablespoons of batter into hot pan and spread with back of spoon to resemble pancakes. Fry till brown on bottom, turn and fry till brown on other side, pressing slightly with spatula so they will brown evenly.
Sprinkle with cinnamon sugar** and serve.
Makes about a dozen fritters.
* to substitute all-purpose flour, use 1/2 cup A-P flour, 1 t. baking powder, and 1/4 t. salt
**To make cinnamon sugar, mix 2 T. sugar with about 1/2 t. cinnamon.
Variation: While the first side is cooking, top fritters with slices of banana, pressing the slices gently into the batter, then turn and brown on second side. Still good with cinnamon sugar.

Okay, I made these for lunch. First off, they were INHALED. Clearly, the kids like them.
But they were like fried pudding. Does that sound right? I made a huge mess with the first lot (I crowded the pan).
Bananas would be awesome in these.

Sandra, I thought they were like fried pumpkin pie, but pudding is a good description, too.
