I bought some because it was cheap, although I've never used it before. I've been experimenting with it, partly to see if the rind is edible (doesn't seem to be, but Buddy says it is) and find out what it tastes like. It says it is salted and smoked, so I thought it would taste like bacon. It doesn't. It also doesn't seem to fry up crisp until it's on the verge of burning. I have about half of it left and I don't know what to do with it. Any ideas?

Simmer it in water for maybe 5 minutes. Take it out and dredge it in seasoned flour. Let it sit for a couple of minutes until it gets wet again and dredge it back thru the flour. Fry it in lard or oil in a med. hot skillet until its brown and crispy. Like cooking salt pork.
