Cafe au Lait: Equal parts of steamed milk and freshly brewed, strong coffee, usually 6 oz. of each.
Cafe Mocha: Freshly brewed hot coffee (6 oz.) blended with 1/3 c. heated chocolate milk, topped with whipped cream.
Iced Coffee: Use coffee brewed 1-1/2 to double strength. Blend 2/3 c. cooled coffee with 1/3 c. cold milk. Pour over ice.
Espresso: Made from espresso coffee beans in an electric machine or stove-top maker. Traditionally served in a warmed demitasse, filling the cup half way (about 1-1/2 oz.). Usually garnished with a small piece of lemon or orange peel which is twisted into the coffee for flavor.
Cappuccino: Equal parts of freshly brewed espresso and steamed milk, topped with an equal amount of foam from the steamed milk.
Cafe Latte: Freshly brewed espresso (1-1/2 oz.) placed in a large mug and filled the rest of the way with steamed milk (7-8 oz.), topped with a thin layer of foam from the steamed milk.
Iced Latte: Cooled freshly brewed espresso (3 oz.) and 6-8 oz. cold milk in a tall glass, over ice cubes.
