Don't these sound good? I think I'm going to make some for Christmas. Easy peanut butter cup cookiesAll you need is: a greased mini-muffin pan 1 package of Reese’s Peanut Butter Cups Miniatures a roll of Pillsbury Peanut Butter Cookie dough* Roll dough into 1" balls and drop in pan. Bake at 350 for 7 minutes or until puffed. Meanwhile, unwrap peanut butter cups while cookies are baking. When cookies are done, press one peanut butter cup into center of each cookie while cookies are hot. Place pan in the refrigerator for 10 minutes**. Remove cookies from pan with a knife. * I am going to substitute Three Ingredient Peanut Butter Cookies**The cookies are much easier to remove from pans if you loosen them with a knife after 10 minutes then put them back in the refrigerator until the chocolate sets up. I don't know what the yield is. The recipe didn't say. I bought the stuff to make them today, including the roll of cookie dough (it was on sale, so I said, 'What the heck'). I planned on making them tomorrow, but am seriously considering doing it tonight instead.
I want to try some in mini-muffin pans and some in little foil wrappers set in a cake pan, just to see how each of them work. I'll let you know how many I end up with.

I couldn't stand it, I had to make them. They made about 2 1/2 dozen cookies. I also found that the cooking time had to be altered a bit and that you must leave them in the pans until they chocolate sets up (or the cookies squish). I changed the recipe to reflect those changes.

By the way, I cooked these in a toaster oven so they had to be baked in 3 batches. I started them at 8:30 and had them all in the fridge by 8:50!
I forgot to mention that, while the foil cups held the cookies just fine, they got weird-shaped. The muffin tins made prettier cookies.
The kids are wild about them. They have company with them, so they're all showing restraint. Still, they're almost gone. I was really surprised there were any left last night.

I kept looking at the mini-muffin tins ($15 each), but didn't want to spend the money on them because I didn't think I'd really use them. Then I found 2 at a secondhand store for 10 cents apiece. I figured, if I didn't use them, it wasn't such a big waste of money, so I got them. Much to my surprise, I use them all the time!
