I'm trying to find more ways to use the fresh cheese I made last summer and put in the freezer. This morning I made cheese and potato pancakes! Boil, drain and mash 3 large potatoes, mix with about 1/2 as much cheese as you have potato, beat two large eggs with about a cup of heavy cream (I'm trying to use up an abundance of cream too), stir into the cheese and potato mix, add enough flour to make a soft dough, (taste to see if enough salt) drop spoonfuls into a skillet with hot lard and flatten into pancakes. Fry till lightly brown on each side. I served them with salsa this morning, but you can put about any topping on them you like. Sweet or savory, either is good.

I make these quite often using up leftover mashed potatoes. I do not put cream in mine, though because I rarely have it. I use milk instead. They are great as a side dish at supper, but I never really considered having them as a main dish before.

They sound like they'd be tasty with fried apples. I might have to make these next time the kids come.
