I made these today and everyone liked them better than chocolate chip cookies made with butter! Coconut Oil White Chocolate Chip Cookies 3/4 cup coconut oil, softened (softened to the consistency of soft butter) 3/4 cup granulated sugar 3/4 cup light brown sugar, packed 2 eggs 1 1/2 teaspoons vanilla extract 2 cups all-purpose flour 1/4 cup whole wheat flour (you can use all white flour, but this makes them chewier) 1 1/2 teaspoons baking soda 1/2 teaspoon salt 1 1/2 cups white chocolate chips 1/2 cup roughly chopped nuts (your choice), optional Preheat oven to 350. Lightly spray 2 cookie sheets and set aside. Put coconut oil, sugars, eggs, and vanilla extract in large mixing bowl. Beat with electric mixer on medium-high until light and fluffy. Stir in remaining ingredients. Drop by rounded teaspoons onto baking sheets, leaving about 2" between cookies. Bake about 8-10 minutes, or until very lightly browned. Remove immediately. Makes about 3 dozen cookies. Note: This link goes to the recipe that inspired mine.
