I made a batch of these a few minutes ago to see how they were. They're pretty good, although I would consider them to be more of a crepe than a regular pancake. We ate them plain because they were sweet enough that they didn't need syrup. I think they'd be good with thinned sour cream. I might try that next time.
2-Ingredient Pancakes (Gluten Free)
1 ripe banana, mashed well 2 eggs
Beat eggs into mashed banana with a fork. Drop batter onto hot griddle, using about 2 or 3 tablespoons per cake. Cook until brown, flip, and cook until set and brown on other side.
Makes about 6 pancakes.
