Grits Casserole

8 servings grits 8 eggs 3/4 lb. cheddar cheese, grated 2 tsp. bacon drippings, or margarine.
Cook grits as directed on package. Chill. Beat eggs until fluffy. Mix with grits and half of cheese. Grease 3 qt. casserole with bacon drippings or margarine. Pour mixture into casserole. Top with remaining cheese. Cover. Refrigerate overnight.Bake at 350 for 40 minutes. (You can add crumbled bacon or sausage for extra flavor.)
